Creamy Tomato Soup
PRINT RECIPEThis is my version of the classic, cozy tomato soup, and it is always a hit.
Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion (minced)
- 2-3 garlic cloves (minced)
- Pinch of hot chili flakes
- 2 medium carrots (chopped)
- 1 large can of whole peeled tomatoes (28 oz = about 800 ml)
- 2 cups (5 dl) vegetable or chicken broth
- 1 tablespoon balsamic vinegar
- 1 can cannellini/white beans
- 2 tablespoons of fresh thyme (or two teaspoons of dried thyme)
- 4 oz (100 gram) cream cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot. Sauté onion in the oil for a couple of minutes.
- Add garlic, chili flakes, and carrots. Continue to cook until onion is see-through and carrots start to soften.
- Add tomatoes, broth, balsamic vinegar, white beans, and thyme.
- Let simmer for 15-20 minutes. Take off heat and stir in cream cheese. Blend with an immersion blender, or in your blender (be careful so that you don’t burn yourself!).
- Add salt and pepper to taste. Serve with delicious bread, or perhaps a grilled cheese sandwich.
