Creamy Tomato Soup

This is my version of the classic, cozy tomato soup, and it is always a hit.

Instructions

  1. Heat olive oil in a large pot. Sauté onion in the oil for a couple of minutes.
  2. Add garlic, chili flakes, and carrots. Continue to cook until onion is see-through and carrots start to soften.
  3. Add tomatoes, broth, balsamic vinegar, white beans, and thyme.
  4. Let simmer for 15-20 minutes. Take off heat and stir in cream cheese. Blend with an immersion blender, or in your blender (be careful so that you don’t burn yourself!).
  5. Add salt and pepper to taste. Serve with delicious bread, or perhaps a grilled cheese sandwich.
