Spiced Carrot Oat Muffins
PRINT RECIPEHaving the healthy snacks handy makes a real difference in my day to day life. I love having my freezer stocked with these muffins!
Ingredients
- 1 cup (2.5 dl) shredded carrots
- 1 ripe banana (mashed)
- 2 eggs
- 1 cup (2.5 dl) milk
- 1 tablespoon honey
- 1 tablespoon olive oil
- 2 cups (5 dl) old fashioned rolled oats
- 1 teaspoon baking powder
- 1-2 teaspoons cinnamon
- Pinch of salt
- 1/2 teaspoon vanilla extract or vanilla powder
- 1/2 cup (1.25 dl) unsweetened coconut flakes
- 1/2 cup (1.25 dl) chopped pecans
- 2-3 tablespoons pumpkin seeds
Instructions
- Set oven to 350F/175C.
- Mix all wet ingredients in a bowl.
- Stir together the dry ingredients and add to the bowl with wet ingredients. Stir to combine.
- Distribute into muffin pan with muffin liners (or a silicone muffin pan).
- Bake for 25-30 minutes, until muffins are set and top is golden. Let cool and enjoy! These muffins freeze very well.
