Quinoa Tabouleh
PRINT RECIPEA perfect side dish that also is great if you want to bring lunch into work. Just add your choice of protein! I love serving this with grilled chicken thighs, tzatziki, pitas, and a green salad.
Ingredients
- 2 dl (~1 cup) uncooked quinoa
- 2 tomatoes (chopped)
- 1 bell pepper (chopped)
- 1/2 cucumber (chopped)
- 1/2 red onion (chopped)
- 1 dl (~1/2 cup) minced fresh parsley
- 1 dl (~1/2 cup) minced fresh mint
- Juice from one lemon
- 2 tablespoons of olive oil
- 0.5 teaspoon salt
- Black pepper to taste
Instructions
- Cook quinoa according to the instructions on the box.
- Mix all of the ingredients.
- Serve!
