Banana Oat Chocolate Chip Muffins

Ingredients (12 muffins)
- 2 cups (5 dl) rolled oats
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla powder
- 1 pinch of salt
- 2 teaspoons cinnamon
- 1/2 cup (1 dl) dark chocolate chips or chopped up chocolate
- 2 bananas
- 2 eggs
- 1 cup (2.5 dl) plain Greek yogurt (2% or nonfat)
Instructions
- Preheat oven to 400F/200C.
- Blend oats to a flour and transfer to a bowl. Stir in baking powder, vanilla, salt, cinnamon, and chocolate chips.
- Add bananas, eggs and yogurt to your blender and blend to a smooth batter.
- Add dry ingredients to blender and blend until just combined. You may need to stop blender and scrape batter down from the edges with a spatula.
- Pour the batter into a lightly greased muffin tin (or silicone form). Bake for 12-15 minutes in the middle of the oven, until muffin tops are set and a toothpick comes out clean.
