Gingerbread Oat Muffins

These moist and delicious muffins are a favorite of mine during the holiday season in December! The recipe makes 12 muffins.

Instructions

  1. Set oven to 350F / 175C. Grease a muffin pan (not needed if you use a silicone pan).
  2. Stir together apple sauce, eggs, yogurt, syrup and olive oil in a bowl.
  3. Blend oats to a flour. In a bowl, mix oat flour, baking powder, baking soda, and spices.
  4. Add dry ingredients to the wet batter and stir to combine. Gently stir in cranberries/lingonberries.
  5. Divide into muffin pan.
  6. Bake for 20 minutes, or until muffins are set. ENJOY!

Nutrition per muffin: 120 kcal, 5 g protein, 18 g carbohydrates, 4 g fat, 2 g fiber
