Gingerbread Oat Muffins
PRINT RECIPEThese moist and delicious muffins are a favorite of mine during the holiday season in December! The recipe makes 12 muffins.
Ingredients
- 1/2 cup (1 dl) apple sauce
- 2 eggs
- 1 cup (~2.5 dl) plain Greek nonfat yogurt
- 3 tablespoons molasses or maple syrup
- 2 tablespoons olive oil
- 2 cups (~5 dl) rolled oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cloves
- Pinch of salt
- 1 cup (~2.5 dl) fresh or frozen cranberries (or lingonberries)
Instructions
- Set oven to 350F / 175C. Grease a muffin pan (not needed if you use a silicone pan).
- Stir together apple sauce, eggs, yogurt, syrup and olive oil in a bowl.
- Blend oats to a flour. In a bowl, mix oat flour, baking powder, baking soda, and spices.
- Add dry ingredients to the wet batter and stir to combine. Gently stir in cranberries/lingonberries.
- Divide into muffin pan.
- Bake for 20 minutes, or until muffins are set. ENJOY!
